Lemon Coriander Soup

In winters, Soups are regular in my daily routine. 4 days in a week we indulge in soups so trying tasting different soups are always on my mind. I always try to use every vegetable available in my fridge for soups.

Soups are infact a great way to feed your fussy kids the vegetables they otherwise dont like to eat. My little one doesnt like the tangi flavours though but this particular lemon coriander soup he loved. Since he doesnt like to eat vegetable in soup so I usually churn his share in mixer grinder and sieve for him to drink. 

Here I am going to share a very quick, easy and yet very yumny tangi soup. A perfect accompanion to dinner for a cold winter evening. Not much of ingredients are required for this, I used least of all...you may add more veggies to this recipe as per your taste. 

Serves 2-3
1 small onion chopped
5-6 garlic chopped
1 tsp grated ginger
1/2 cup corainder leaves chopped with stalks ( you may increase the quantity)
1/2 cup finely chopped beans
1/2 cup finely chopped carrots
half lemon juice
little chopped coriander for garnishing
1 tbsp Olive oil or any other cooking oil
salt to taste
Water 2 glass

1-2 tsp boiled methi sprouts (as shown in pic above) is not part of this Soup though I added in my cup of soup as I am on diet 😉😎 and not everyone likes the taste.

1. Take a pressure cooker. Keep it on gas and add Oil.

2. When hot add chopped onion, garlic and ginger. saute for a min.

3. Add carrots and beans. Saute for 2 mins.

4. Add coriander leaves. Mix.

5. Now add water and salt. close the lid of cooker and let 2-3 whistle come on medium gas.

6. Take out 3-4 tsp of cooked vegetables from the cooker and churn them in mixie. sieve and add back to main soup in cooker.

You may skip step 6 - it is only to give soup a little thickness and colour.

7. Add chopped coriander kept for garnishing. Add lemon juice. Serve hot.

P.s. I added methi sprouts (pre boiled) in last in my cup, Just in case you want to add.😉
