Moong Carrot soup


Healthiest of all pulses Green Moong whole is the best if one wants to loose weight and in the form of soup, the combination of moong daal and carrots gives you a different great change for your palate. 

A hot tasty soup meal which offers plenty of health benefits. The soup retains so much water it fills you up with fewer calories and I found them the best filling meal complete in itself.

Moong daal is a renowned superfood for weight loss. People specially go on moong daal diet and this soup can be one of their meal as well.


Ingredients: 


  • 2 cups green moong dal 
  • 1 cup chopped carrots 
  • 1 tsp olive oil 
  • 1 medium size sliced onion
  • 1 small chopped tomatoes
  • 2 tsp finely chopped garlic 
  • 1 tsp freshly grounded black pepper
  • 3/4 cup low fat skim milk 
  • salt to taste
  • 1tsp jeera 
  • 1 tsp flax seeds (optional) 
  • pinch turmeric powder (optional)

Procedure 

Heat oil in a cooker and add the onions and garlic. Saute on low flame for 2-3 mins 

Add jeera and flax seeds, when it starts spluttering add pinch turmeric, tomatoes and carrots. Mix well and cook on low flame for 3-4 minutes for vegetables to become tender. 

Add green moong dal and 5 cups of water and cook for 10 mins till cooked (Give 4-5 whistles) 

Keep aside to cool and properly blend in a mixie to a smooth puree. You may sieve it if you want, I did.

Transfer the puree back into the cooker, add milk, one cup of water, pepper and salt for seasoning, mix well and bring to a boil.

Serve the hot soup immediately.
